When 13 Chefs with 27 Michelin Stars Converge in Vietnam, in Harmony with the Art of Wine

The 100 Flavors - Michelin-Starred Chefs series, officially licensed from Dinner Incredible, has successfully concluded its journey in Ho Chi Minh City and Hue, marking a defining milestone for Vietnam’s fine-dining landscape.

 

As the official wine partner of the program, BMWine accompanied this historic culinary journey - connecting Michelin-level gastronomy with the refined artistry of wine.

For the first time, Vietnam welcomed 13 international Michelin-starred chefs, representing a collective total of 27 Michelin stars, united within a single multi-city program. More than a showcase, 100 Flavors became a platform where global haute cuisine, cultural storytelling, and Vietnamese ingredients converged - positioning Vietnam firmly on the international fine-dining map.

27 Michelin Stars - A Defining Milestone for Vietnam’s F&B Industry

Taking place from November 23-30, 2025, 100 Flavors gathered Michelin-starred chefs from France, Italy, Germany, Greece, and beyond. Each chef brought a distinct culinary philosophy, while sharing the uncompromising Michelin standards of precision, discipline, and respect for ingredients.

Among the participating chefs were several globally renowned three-Michelin-star figures, including:

They were joined by a selection of distinguished one- and two-Michelin-star chefs from across Europe and the international culinary scene. The collective presence of 27 Michelin stars in Vietnam is widely regarded by industry observers as one of the most significant culinary gatherings the country has ever hosted.

Ho Chi Minh City – Vietnamese Ingredients Through a Michelin Lens

In Ho Chi Minh City, the showcase “The Ho Chi Minh City Symphony”, hosted at La Vela Saigon Hotel, presented menus inspired by Vietnamese ingredients and executed with Michelin-level techniques and presentation standards.

The dishes created a refined dialogue between:

  • Local Vietnamese flavors

  • The individual culinary signatures of Michelin-starred chefs

  • International fine-dining structure and aesthetics

To accompany these menus, BMWine curated youthful, well-balanced wines designed to enhance flavor clarity and textural harmony, allowing the ingredients to remain at the heart of each course.

Hue - “Dạ Yến Hoàng Cung”: Where Tradition Meets Haute Cuisine

In Hue, the “Dạ Yến Hoàng Cung” showcase unfolded in an atmosphere inspired by Vietnam’s imperial heritage. Within this setting, Michelin-starred chefs reinterpreted traditional Vietnamese cuisine using contemporary haute cuisine techniques.

This showcase demonstrated that Michelin standards are not confined to European gastronomy. Instead, they are adaptable frameworks capable of elevating indigenous culinary traditions while preserving their cultural essence.

BMWine complemented this experience with elegant, layered wines selected to match both the refined structure of the dishes and the ceremonial ambiance of the imperial setting.
