Château LES PARIS has been certified "Integrated Farming" estate since 2005 and then certified High Environmental Value. The Chateau is recently, committed to a sustainable production approach, respecting a fundamental principle: to produce a quality wine that, throughout its development, respects the Men, the Earth and our Landscapes. This commitment carries the signature "Bee Orchid", a rare orchid preserved on the estate, certification label of Earthwatch Institute NGO.

Château LES PARIS est domaine certifié "Agriculture Intégrée" depuis 2005 puis certifié Haute Valeur Environnementale. Le Château s'est engagé depuis peu dans une démarche de production durable, respectant un principe fondamental : produire un vin de qualité qui, tout au long de son élaboration, respecte les Hommes, la Terre et nos Paysages. Cet engagement porte la signature « Bee Orchid », une orchidée rare conservée sur le domaine, label de certification de l'ONG Earthwatch Institute.

The vinification of Côtes de Bordeaux follows several steps: destemming, crushing, alcoholic and malolactic fermentations, ageing in tank and/or in barrels, blending and, finally, the making of the cuvées. Artisanal work in the vineyard and in the cellar combines tradition with modernity, respecting rigorous technical specifications.

The wines of the Côtes de Bordeaux are therefore prepared according to traditional Bordeaux methods to offer consumers wines that are always expressive and delicious.

La vinification des Côtes de Bordeaux suit plusieurs étapes : éraflage, foulage, fermentations alcoolique et malolactique, élevage en cuve et/ou en barriques, assemblage et enfin élaboration des cuvées. Le travail artisanal à la vigne et au chai allie tradition et modernité, dans le respect d'un cahier des charges rigoureux.

Les vins des Côtes de Bordeaux sont donc élaborés selon les méthodes traditionnelles bordelaises pour offrir aux consommateurs des vins toujours expressifs et délicieux.

Geographical location: At 65km to the east of the city of Bordeaux, on the edge of the Gironde, at the mouth of the Dordogne and the Lot-et-Garonne, the vineyard of Sainte-Foy Côtes de Bordeaux covers 350 hectares, spread over the communes surrounding the picturesque medieval town of Sainte-Foy-La-Grande.

Situation géographique : A 65km à l'est de la ville de Bordeaux, en bordure de la Gironde, à l'embouchure de la Dordogne et du Lot-et-Garonne, le vignoble de Sainte-Foy Côtes de Bordeaux s'étend sur 350 hectares, répartis sur les communes entourant la pittoresque cité médiévale de Sainte-Foy-La-Grande.

Blended wines

A speciality of Bordeaux, blending is one of the characteristics of the Côtes wines. This blending, as a function of how the varieties match and complement one another, results in varied styles of wine with a character and a personality of their own. The grapes in the Côtes de Bordeaux are harvested parcel by parcel, variety by variety.

The reds of the Côtes de Bordeaux are mainly made from the Merlot variety, associated with Cabernet Sauvignon and Cabernet Franc.

Vins d'assemblage

Spécialité bordelaise, l'assemblage est une des caractéristiques des vins de Côtes. Cet assemblage, en fonction de l'adéquation et de la complémentarité des cépages, donne naissance à des styles de vins variés avec un caractère et une personnalité qui leur sont propres. Les raisins des Côtes de Bordeaux sont vendangés parcelle par parcelle, cépage par cépage.

Les rouges des Côtes de Bordeaux sont majoritairement issus du cépage Merlot, associé au Cabernet Sauvignon et au Cabernet Franc.
