On 17 July 2026, SHIBUI – The Sensory Intersection unfolded at Hotel Nikko Saigon as an exclusive Wine Dinner and Art Performance, curated by BMWine in collaboration with Hotel Nikko Saigon.

Bringing together fine wine, gastronomy, music, visual art and Japanese-inspired ritual, SHIBUI offered guests more than an elegant dinner. It created a complete multi-sensory journey in which every element was thoughtfully composed to be seen, heard, tasted, touched and remembered.

Inspired by the Quiet Beauty of Shibui

The concept of SHIBUI was inspired by the Japanese aesthetic of Shibui — a form of beauty defined by refinement, subtlety and depth.

Rather than revealing everything at once, Shibui invites discovery through layers. Its beauty becomes more meaningful with time, much like a fine wine that gradually expresses its structure, character and complexity.

This philosophy shaped the entire evening at Hotel Nikko Saigon. From the lighting and spatial design to the sequence of wines, dishes and performances, each detail contributed quietly to the atmosphere without overwhelming the experience.

The journey began with the Omikuji Ritual, inviting guests to enter the world of SHIBUI through a symbolic moment of anticipation, discovery and good fortune.

A True Wine Dinner at the Heart of SHIBUI

At its core, SHIBUI remained a true fine wine and dining experience.

Six selected wines from BMWine were paired with a refined multi-course menu created by the culinary team of Hotel Nikko Saigon. Each pairing was designed not only to complement the flavours of the dish but also to shape the emotional rhythm of the evening.

The experience moved from the elegance and freshness of Champagne to the expressive layers of white wines, before reaching the depth and structure of red wine during the evening’s most dramatic chapters.

Each bottle became part of a larger narrative. Wine was not treated as an accompaniment placed beside the cuisine, but as an essential element connecting taste, atmosphere and emotion.

Through this carefully curated sequence, guests were invited to experience how acidity, texture, aroma and structure could interact with each dish while gradually revealing the character of the entire Wine Dinner.

When Wine Became a Language of Performance

One of the most memorable highlights of SHIBUI – The Sensory Intersection was the way wine was transformed into a visual and sensory performance.

Guided by international Wine Expert Corentin Babouhot, key moments of wine presentation, pouring and decanting were captured through a live camera system and projected onto the grand silk screen.

Every movement could be observed in detail: the opening of a bottle, the flow of wine into the glass and the changing tones of colour beneath the light.

This visual presentation allowed wine to be experienced beyond the palate. It could be seen, heard and felt throughout the space, creating a stronger connection between the guests and each selected wine.

The ritual of wine service became part of the storytelling — precise, expressive and deeply connected to the spirit of SHIBUI.

Music, Wine and The Crimson Canvas

The sensory journey was further enriched by the piano performance of Lưu Đức Anh, whose music created a delicate emotional layer throughout the evening.

Rather than standing apart as an independent performance, the piano became part of the atmosphere, accompanying the progression of the Wine Dinner and connecting its quieter moments.

Another defining chapter was The Crimson Canvas, a live painting performance by artist Trần Trung Bảo.

During the performance, red wine became a direct artistic medium. Its distinctive colour, movement and texture were translated onto the canvas, creating an artwork shaped by the same wine culture at the heart of the event.

The performance brought visual art and wine into one shared language. What had previously been poured, tasted and appreciated in the glass was now transformed into colour, gesture and memory.

It was a distinctive artistic moment that expressed the essence of SHIBUI: understated yet powerful, refined yet emotionally resonant.

An Omikuji Ritual with a Meaningful Purpose

Beyond its artistic and culinary experience, SHIBUI also carried a meaningful social purpose.

Through the Omikuji Lucky Draw, guests contributed VND 200,000 for each lucky number, with 100% of the proceeds donated to VinaCapital Foundation’s “Nâng Niu Sự Sống” programme.

Each number therefore represented more than an opportunity to receive a special gift. It became a gesture of care and shared responsibility, extending the spirit of the evening beyond the event itself.

The ritual brought guests together through hope, generosity and the belief that a memorable experience can also create a positive contribution to the community.
