SHIBUI Wine Dinner: 6 Exceptional Wines Selected by BMWine

At SHIBUI – The Sensory Intersection, each wine was selected not only to complement a particular dish, but also to guide the emotions of guests through every chapter of the evening.
From the vibrant freshness of Champagne and the elegance of Riesling and Bordeaux Blanc to the graceful character of Brouilly, the depth of Malbec and the aromatic richness of Gewürztraminer, the six wines selected by BMWine created a carefully considered journey of balance, contrast and sensory discovery.
Held at Hotel Nikko Saigon, SHIBUI presented wine in a way that extended beyond conventional tasting. Each label was thoughtfully connected with gastronomy, music, visual art and live performance, allowing guests to remember every glass through more than aroma and flavour alone.
Course 01: Léon Launois Cuvée Réservée Brut
The journey began with Léon Launois Cuvée Réservée Brut, a French Champagne crafted from three classic grape varieties: Pinot Noir, Chardonnay and Pinot Meunier.
The grapes were sourced from renowned Champagne areas including Montagne de Reims, Côte des Blancs and Vallée de la Marne. Together, the three varieties created a harmonious structure, lively freshness and refined elegance—qualities perfectly suited to the opening chapter of the evening.

Champagne Léon Launois Cuvée Réservée Brut
With a dosage of approximately 6 g/L, Léon Launois Cuvée Réservée Brut offered a dry, balanced and sophisticated profile. Its vibrant bubbles awakened the palate while creating a natural transition from the welcoming atmosphere into the formal dining experience.
At SHIBUI, Champagne was more than an opening drink. It was the first signal of a journey in which every sense would gradually be awakened.
Course 02: Schmitt Söhne Dry Riesling 2021
Following the brightness of Champagne, Schmitt Söhne Dry Riesling 2021 introduced a refreshing white wine from Rheinhessen, Germany.

Produced entirely from Riesling grapes, the wine expressed a vibrant, elegant and energetic character. Its naturally lively acidity created a precise structure and a clean, refreshing sensation on the palate.
Riesling is widely appreciated for its ability to reflect the personality of its growing region. In this dry expression from Schmitt Söhne, the balance between aromatic character, freshness and a crisp finish allowed the wine to connect naturally with the multiple layers of flavour within the paired cuisine.
The arrival of Schmitt Söhne Dry Riesling in Course 02 brought a new dimension to the SHIBUI journey—brighter and more delicate, yet with sufficient depth to maintain the continuity of the experience.
Course 03: Domaine Pierre-André Dumas Brouilly 2023
Representing the Brouilly appellation in France, Domaine Pierre-André Dumas Brouilly 2023 offered an elegant and approachable expression of red wine.

Made from Gamay, the wine displayed a fruit-forward character, a supple structure and an appealing sense of freshness. Rather than relying on intensity or weight, Brouilly revealed its charm through balance, versatility and a graceful finish.
These qualities made Domaine Pierre-André Dumas Brouilly an elegant transition within the SHIBUI wine journey. It introduced the depth of red wine while retaining a lightness that complemented the overall rhythm of the menu.
Its character also reflected the philosophy of Shibui: beauty that does not seek attention, but gradually reveals its refinement and inner depth through thoughtful appreciation.
Course 04: Franc Beauséjour Bordeaux Blanc 2023
From Bordeaux, France, Franc Beauséjour Bordeaux Blanc 2023 was crafted from a blend of Sauvignon Blanc and Sémillon.

Sauvignon Blanc contributed freshness, definition and vibrant aromatic expression, while Sémillon added roundness, texture and a softer structure. Together, the two varieties created a white wine that was both refreshing and sufficiently layered to accompany delicately prepared cuisine.
Franc Beauséjour represented an approachable expression of classic Bordeaux Blanc, balancing fresh fruit character with structure and harmony on the palate.
Within the progression of SHIBUI, the wine introduced a refined moment of brightness, highlighting the precision with which ingredients, culinary techniques and wine personalities were brought together.
Course 05: Tutiac Origines Ter Pointe 2019
A deeper and more contemplative expression followed with Tutiac Origines Ter Pointe 2019, a red wine from Côtes de Bourg in Bordeaux, France.
Crafted from Malbec, Ter Pointe displayed a deep colour, defined structure and a more powerful personality than the wines served in the earlier chapters. The 2019 vintage provided the maturity needed for its different elements to come together in a balanced and expressive composition.

While Brouilly represented the gentle, fruit-driven elegance of Gamay, Ter Pointe introduced another dimension—richer, darker and more structured. It marked an important transition in the tasting journey, bringing the emotional progression of the evening closer to its climax.
At SHIBUI, wine was not simply poured and served. It was explored through movement, lighting and the performance of the wine expert. With its distinctive personality, Tutiac Origines Ter Pointe became a fitting expression of depth within the event’s multisensory Wine Ritual.
Course 06: Domaine Pierre-Henri Ginglinger Gewürztraminer 2020
The journey concluded with Domaine Pierre-Henri Ginglinger Gewürztraminer 2020, an aromatic white wine from Alsace, France.

Gewürztraminer is celebrated for its expressive aromatic character, often evoking flowers, spices and ripe exotic fruits. Beyond its captivating fragrance, the variety also offers a rounded texture and a generous mouthfeel, making it a natural companion for dessert.
At SHIBUI, the Gewürztraminer 2020 was paired with Okura Matcha by Chef Rose. The wine’s aromatic richness created an intriguing dialogue with the delicate character and distinctive bitterness of matcha, bringing the evening to a refined and memorable conclusion.
Rather than ending the dinner with excessive weight, this Alsace wine delivered a final chapter that was fragrant, graceful and lingering.
