Winemaking

Produced from Negroamaro, Primitivo, and Merlot grapes grown in Puglia using the traditional Appassimento method. The grapes are partially dried before fermentation to concentrate flavors, sugars, and aromas. Fermentation takes place slowly in stainless-steel tanks at approximately 28°C, with gentle punch-downs to keep the skins immersed in the must. After malolactic fermentation, the wine is aged in oak for at least two years before bottling.

Color and Aroma

Deep ruby red in color. Rich and complex bouquet with aromas of ripe dark cherry, balsamic herbs, and vanilla.

Palate and Food Pairing

Full-bodied, smooth, and generous on the palate, with concentrated fruit flavors and a long, persistent finish. Ideal with flavorful dishes, grilled meats, slow-cooked stews, aged cheeses, and caramelized fruit-based dishes. Best served at 18–20°C.
